I only have 8 days left until I’m done with my Whole 30 challenge! I can’t believe how fast it is going by, actually. I am still tempted most days to reach for snacks that I need to avoid, but over all, meal prep and such has become pretty routine now that I have a handful of great recipes in my repertoire. And the best part is that my KIDS are learning to love some of these recipes too. These Whole 30 Chicken Bites were a hit for the whole family. The kids loved being able to pick these right up! My boys liked them dipped in ketchup. My daughter is a purist and likes them plain. And the hubs and I like them dipped in fresh salsa or Whole 30-approved ranch! There are a million ways to eat these babies. Yesterday I even added a couple Whole 30 Chicken Bites to my plate of eggs for breakfast! And the best part? These little babies are LOADED with tons of fresh veggies…but the kids will never know!

Ingredients
Servings: 24-36 bites
Instructions
  1. Preheat oven to 400 degrees. Cover a sheet pan with parchment paper or with a silicone baking mat.
  2. Using a food processor or a hand grater, shred zucchini and sweet potato. Combine sweet potato, zucchini, chicken, onion, cilantro, garlic, egg, salt, and pepper in a large bowl. Stir until the mixture is very well combined.
  3. Heat a non-stick frying pan or griddle to medium high heat. Add the oil of your choice and get it nice and hot.
  4. Use your hands to roll the chicken mix into golf ball sized bites and place them on the hot pan. Cook for 4 minutes or so, and then flip them over. They are ready to flip when there is a nice crust on the outside.
  5. Once they are nicely browned, place the balls on your prepared baking sheet. You will need to work in batches. Add more oil as necessary to prevent sticking.
  6. Bake at 400 degrees for 25 minutes or until the chicken is cooked through. Eat hot with your choice of dipping sauce. These are great leftover, and can also be frozen!
