I’ve mentioned before that we are huge BBQ pulled pork fans over here. I made a giant batch of my Crock Pot BBQ Pulled Pork last week. I was thankful for the leftovers in my fridge because an impromptu neighborhood dinner occurred, and I had enough meat to share. This happens in our neighborhood a lot…in this case, the husbands all had to work late, so a few friends and I gathered what we had in our fridges and put it all together to create a meal for the moms and all the kids. But rather than give everyone “leftovers”, I decided to put a new spin on this BBQ pulled pork. I turned the meat into the most amazing spicy BBQ pork quesadillas EVER.
Something about the flavor combination in these babies really hit the spot. The sweet, smoky BBQ sauce mixed with the spicy heat of the jalapeno relish, and the cool creamy ranch dressing for dipping…well…I’ll let you try for yourself.
