We’ve been eating a lot of roast chicken these days. When I roast a chicken and throw a couple different veggies together for side dishes, we end up with a perfect Whole 30-approved meal that everyone in the family will eat (win!). But plain old chicken gets boring sometimes, at least for me. So I spiced things up a little…literally. Here’s a spin on boring old chicken to add some pizazz your dinner: Indian Spiced Roast Chicken.

There was not much difference in the preparation of this bird from the way I normally roast a chicken. The main difference was the addition of Indian Spices in the melted ghee that I basted the chicken with before roasting. I had a bunch of garam masala left over from a recipe I made a while back. So I thought that combined with a little curry powder would make this bird a little more interesting. And guess what? It was a hit! Even the kids gobbled it up. Ingredients
Servings: 4-6
Instructions
  1. Preheat oven to 375. Melt ghee in a small pan. Stir in spices and mix well.
  2. Place chicken in a roasting pan. Use a basting brush to cover the bird with the spice mixture. You should use all of it.
  3. Bake uncovered for 90 min-2 hours or until a meat thermometer reads 165 degrees. Let the chicken rest for 10 minutes before carving.
