I feel almost silly posting this “recipe” because it really is SO simple. It’s more a concept really. One of the biggest things that kept me from trying to eat a paleo diet sooner was that I feared it would be difficult to feed myself, especially at lunch time. I don’t know about you, but at lunch time, my house is um…what’s the word? CRAZY. The kids are usually ready to chew their arms off from being so hungry. There is always much whining, much crying, and usually at least one child running laps around the kitchen begging for “snacks” while I try to throw sandwiches and fruit on a plates. Since sandwiches are pretty much out with paleo, I needed something super fast to throw together that I would actually look forward to eating. Enter, the Paleo Turkey and Spinach Wrap.
Paleo Turkey and Spinach Wrap
- 2 slices of nitrate-free turkey breast (I love Applegate brand)
- 4 slices of nitrate-free salami (I love Applegate brand here too)]
- 2 tsp. yellow mustard
- 1/2 cup baby spinach leaves.
Place the turkey on a plate. Add two pieces of salami on top, but line it up with one of the edges of the turkey. Add a teaspoon of mustard on top of the salami. Layer the baby spinach leaves on top, then roll all the ingredients together into a tight “wrap”. That’s IT!
This concept could be used with any nitrate-free deli meat. And you could add whatever veggies you like to the inside. Peppers and cukes would be delish. And fruit might be interesting to add also…sliced peaches or apple? Anyhow, this lunch has saved me more days than not over the last week. It’s also especially awesome for trips to the park where a salad may not be all that convenient to eat. I love these divided lunch containers for park trips, field trips, pool trips, or any other time we need to eat on the go. I tried out these Paleo Turkey and Spinach Wraps last week on a park play date, and they were perfect. They stayed wrapped despite being thrown in the cooler with all the kids’ lunches, and they were not messy to eat at all.
