A friend brought me a giant bag of fresh apricots and limes from her friend’s trees. They were nice and ripe so I decided to create a recipe for apricot salsa. I’ve never had apricot salsa before, but I love peach salsa, so I figured it might be good. It actually turned out better than I thought. Since apricots are in season right now, maybe you can get your hands on some and give this a try. I think it would be delicious on chicken too!

Apricot Salsa


2 pounds fresh apricots (about 4 cups), chopped

1/2 red onion, minced

1 small red bell pepper, diced small

1 Anaheim pepper, seeds removed, diced small

1/4 cup cilantro, chopped,

3-4 fresh limes, juiced

salt to taste

Chop all the ingredients and place in a medium bowl. Add lime juice and salt. Stir until all ingredients are well combined.

Serve with tortilla chips!
