Oh. Yes. Look at all that cheese! This recipe is so delish you won’t even miss the meat. Comfort food? I think so.


Three Cheese Spinach Stuffed Shells
serves 6

Ingredients:
12 oz box jumbo shells
1 15-oz container ricotta cheese
2 1/2 cups grated mozarella cheese cheese, divided
3/4 cup grated Parmesan cheese
1 tsp salt
1/4 tsp pepper
24 oz of your favorite marinara sauce (I used this recipe)
10 oz frozen spinach, defrosted with liquid wrung out
Directions:
Preheat oven to 375 degrees.
Boil the pasta in salted water. Drain and run under cold water.
In a large bowl, combine the ricotta, 1 cup mozarella, Parmesan, salt, pepper, and spinach. Mix well.
Spoon cheese into each shell and lay each seam side up into a greased 9 x 12″ casserole dish. They probably won’t all fit in the large dish….the extras make a nice gift for a single neighbor :)
Pour the sauce over the shells and sprinkle on the remaining mozzarella cheese.
Cover with tin foil and bake 30 minutes. Enjoy!
