I had a dear friend over for lunch yesterday, and she has two really tricky dietary restrictions at the moment…soy and dairy. I found this recipe that fit all the criteria, AND I had all the ingredients on hand. I LOVE it when that happens! The recipe was a pretty random combination of stuff, but it actually turned out really good. Here it is:
1 cup lentils
1/4 c. olive oil
2 Tbsp. curry powder
1 tsp salt
2 c. water
2 tart apples, cored and diced
1/4 c. apple cider vinegar
2 potatoes, cooked, cooled, peeled, chopped (I used one white and one sweet)
1/2-1 onion, thinly sliced (I don’t like raw onion, so I sauteed mine with the lentils)
Soak lentils for 15 minutes in hot water.
In a large saucepan, heat oil. Add salt and curry powder. Heat until bubbly. If you like your onions cooked, add them to the oil. Drain lentils and add to saucepan to fry briefly.
Add water to the lentils and cook until absorbed (add more water as needed to cook until lentils are tender), about 20 minutes. Cool.
Combine apples and vinegar in a large bowl. Mix with cooled lentils. Stir in potatoes, (and onion if you like them raw).
Salt to taste, garnish with fresh chopped parsley.
