This is one of our most favorite go-to meals. It’s super easy to throw together, but it tastes like you slaved in the kitchen all day. Next time you’re looking for some good comfort food, give this baby a try…

Italian Sausage and Peppers

Ingredients:
1 lb Italian Sausage (if it’s in links, you need to remove it from the casing)
1 Tbsp. olive oil
1 onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2-4 cloves garlic, minced
1 (15 oz) can diced tomatoes
2 tsp dried basil
salt and pepper to taste
1 lb. penne pasta (or whatever kind you like)
Parmesan cheese

Method:
Brown sausage in a large skillet. Break it up with a wooden spoon as it cooks.

Drain on paper towels. Set aside.

Add oil to pan. Sautee onion until tender. Add peppers and sautee 10 min more.

Add garlic, tomatoes, sausage, basil, salt and pepper. Bring to a boil. Reduce heat and simmer until peppers are soft. (sometimes I add a splash of red wine here if I’m feeling sassy :)

Take a big whif… your house will smell amazing at this point :)

While the Italian goodness bubbles away, start your pasta water. Cook pasta to al dente. Spoon sausage and peppers over pasta and top with cheese.
