I borrowed the cookbook Simply in Season from a friend of mine this week. It is amazing! It provides recipes for each season using ingredients that are fresh during that particular time of year. Tonight we’re having two of them. Here’s the first one:

Broccoli Gratin

 Ingredients:
5-6 cups broccoli, lightly steamed
1 onion, thinly sliced
2 clove garlic, minced
1/4 cup flour
2 cups milk
1 tsp salt (or more to taste)
1/4 tsp pepper
pinch each nutmeg and ground red pepper
1 cup cheddar cheese
1 cup bread crumbs
1 Tbsp butter
1/4 cup Parmesan cheese
1 Tbsp dried parsley

Directions:
In small saucepan, saute onion in oil until fragrant. Add garlic.

Sprinkle flour on onions and garlic and cook, stirring constantly for 3 minutes without browning.

Whisk in 2 cups milk. Bring to a boil.

Add salt, pepper, and nutmeg. Cook 5 minutes.

Stir in cheese and remove from heat. Combine with steamed broccoli.

Transfer to a 2 quart casserole dish.

Combine breadcrumbs, butter, parmesan cheese, and parsley. Sprinkle on top of broccoli mixture.

Bake in preheated 350 degree oven for 20 minutes.
