I’m itching for fall. As a result, I keep throwing cold-weather comfort foods into my meal plan each week as if to coax fall to get here a little bit faster. So far it’s not working…but we’ve had some yummy dishes! Here’s one to try…

Lentil Stew

Ingredients:
1 chopped onion
2 stalks chopped celery
2 cloves garlic, minced
1 green bell pepper, chopped
6 c. water
1 c. barley
1 c. dry lentils
1 carrot, shredded
2 c. tomato sauce
2 Tbsp. apple cider vinegar
2 Tbsp. soy sauce
1 tsp. dry basil
1/2 tsp. marjoram
salt/pepper

Method:
Saute onion, celery, bell pepper, and garlic until soft.
Add water, barley, and lentils. Bring to a boil.
Reduce heat to a simmer, stir, cover, and cook for 30 min.
Add the remaining ingredients. Cook 30 min more.
Serve over potatoes or rice…or with a big chunk of crusty sourdough (which is what we did :)
