Oatmeal is a food that’s very nutritious, but I have a hard time getting excited about it. When I make it, the texture is never right, and I feel like I need to use a pound of sugar to make it taste good. So many people really enjoy this morning staple that I felt like I must be doing something wrong. So, I decided that I would go on a mission to find a way to eat oatmeal and ENJOY it…and yes, I realize oatmeal cookies don’t count 😉

Here’s the recipe I decided to try this morning:

Baked oatmeal
Baked Oatmeal with Apples and Raisins

1 1/3 cups oatmeal
1 cup raisins
1 cup milk
1/4 cup brown sugar
1 tablespoon butter, melted
1 teaspoon cinnamon
1/8 teaspoon salt
1 apple, chopped
1/4 cup walnuts, chopped (I omitted these during baking since I will be sharing with one who only has 4 teeth :)

Preheat oven to 350°F.

Mix everything together in a greased 1 quart casserole.

Bake, uncovered, for 30 minutes or until milk is absorbed.

Serve with milk or cream. Add more sugar or other toppings to your heart’s desire.

This is a little slice of HEAVEN. I didn’t add milk, cream, or any other toppings before eating…and it was PERFECT.  I’m thinking this recipe will find a permanent place in the breakfast line-up. Mission accomplished! And the best part? My kids will eat it too! Win!
