This morning at Bountiful Baskets, I picked up more food than I ever have before. It was such a good deal for fresh delicious summer bounty, that I couldn’t resist. In addition to my normal basket, I came home with 25lbs of tomatoes…

Still a little under-ripe, but give ’em a couple days, and we’ll be in salsa heaven.
I also came home with 25 lbs of green chilis…
Right now they’re hanging out in Wyatt’s beer fridge…

Lastly, I got a BOX of corn. 48 ears to be exact.
Yeah. That’s a lot of corn.
A friend came over today to learn to can. I had every intention of canning the tomatoes, but realized that they needed some time to ripen on the counter first. So we moved on to the corn instead. I’d originally planned to freeze all of it, but then I found a recipe that looked pretty yummy, AND it could be canned, so it was the perfect project for Alexia and I today. Here’s the recipe:
Fiesta Corn Relish
Ingredients

5-6 ears of corn

1 hot yellow pepper, finely chopped (we used a green chili)
2 cloves garlic, minced
1 1/2 cups cider vinegar
3/4 cup granulated sugar
1/2 cup chopped red onion
1/2 cup chopped sweet red pepper
1/3 cup chopped green onion
1 tsp ground cumin
1 tsp pickling salt
1/2 tsp fresh ground black pepper
2 Tbsp chopped fresh coriander
Directions
1. Bring a large pot of water to a boil over high heat. Add corn. cook for 6 minutes. Drain and cool until easily handled. Cut kernels off the cob. Place kernels in a stainless steel saucepan.
2. Add hot pepper, garlic, vinegar, sugar, onion, red pepper, green onion, cumin, salt and pepper to saucepan. Bring to a boil. Reduce heat and boil gently for 20 min (uncovered). Stir in coriander and cook 2 minutes more.
3. Fill hot, sterilized jars to withing 1/2 inch of rim (headspace). Process for 15 min for half-pint and pint jars.
Makes 4 1/2 cups. ** we doubled the recipe.
YUM! Can’t wait to try this on grilled chicken!
Alexia helped me shuck the rest of the corn…
And I blanched it, cut it off the cob, and filled quart-sized freezer bags with the rest.
This should last a while!
Tomorrow I’ll devise a game plan for the rest of the goodies. Right now, I’m too tired to even think about it. Until then…
